Sum Long Revisited - Teochew Duck Noodles (Dry)
Thankfully, MilkMilk was hungry too so we headed to Tiong Bahru for Teochew Braised Duck Noodles while our companions scoured the area for interesting shots. MilkMilk was curious about Sum Long Teochew Braised Duck after I told her how much I loved the braised duck here.
On my last visit, I was coveting my brother's bowl of "dry" duck noodles. This time, I decided to try it for myself. I was pleasantly surprised to discover that the sauce in which the kway teow (rice noodles) was tossed in was not starchy at all. I wished it was just a little saltier but nonetheless it was reasonably tasty. If I had to choose between the "soup" version and the "dry " version, I would have to say that I prefer the "soup" version.
Thankfully, this was served with a small bowl of duck broth so I could savour the subtle spices that went into making it.
If you're watching your carb intake but can take as much fat and protein as you like (Atkins Diet), fret not as the star attraction at this stall is the braised duck so you can skip the noodles/rice and just consume the duck. MilkMilk loved the succulent duck flesh so much that she ordered an additional dish of duck thigh to share.
The duck thigh was served with a spicy and tart Garlic, Chili & Vinegar sauce. Coincidentally, one of my readers told me about the same sauce on the very same day that I had the opportunity to try it. Thanks for the tip!
The acidity of the sauce complemented the slightly gamey flavour of the duck. I told my mum about the sauce that we missed out on even though we've bought whole ducks takeaway. She told me that the uncle running the stall had explained to her that the sauce was too acidic to pack into a plastic bag for takeaway (hmm...how about the plastic plate that it was served in?). Anyway, I shall bring a glass bottle with me the next time we buy takeaway portions of duck. :)
