Le Royale - Canelé Pâtisserie Chocolaterie

My colleagues and I recently ordered a cake from Canelé, my all-time favourite cake shop, for a fellow team member. The flavour that we picked was "Le Royale", described on the website as a 66% chocolate mousse, hazelnut feullitine, almond success and chocolate genoise with rum.

Canelé is part of the Les Amis group and is named after a pastry, which incidentally derived its name from one of my favourite spices - cinnamon.
I love the cakes from this shop! They're consistently of a very high quality and are so beautiful! Chef Pang is a very talented Pastry Chef! I am in awe of his creations because they possess some measure of classy dramatic appeal but also for how the rich flavours on your palate makes you just wanna go "um...yummy!". Though the recommended serving portions are small, it is not difficult to fathom why they should be small. The reason is because these cakes are made with such quality ingredients and are so rich that they leave you feeling satiated even though you may not have had a huge slice. Good things do come in small packages!
What I love about this cake is the blend of textures and flavours. I love the luxurious taste and smooth texture of dark chocolate, the crunchy fragrance of the hazelnut feullitine, the soft texture of the chocolate sponge (genoise) and the hint of rum. I also love the juicy strawberries and raspberries that are used to decorate the cake.
If you love chocolate, you have to make a trip down to Canelé and indulge yourself. For connoisseurs of dark chocolate, I highly recommend the Gateau Chocolat! Unfortunately, I did not snap a picture of this cake when I last ordered it but trust me, every bite was so rich it was like we were eating chocolate truffles! Oooh! I should stop now, all this talk about chocolate is making me hungry.
